Easy and moist, this banana blueberry muffin recipe comes together quickly and is the perfect afternoon treat. We are in blueberry season right now, so it’s a great way to get some fresh blueberries into this recipe. However frozen blueberries work well too.

How many of you buy bananas only to not consume them in their fine state of yellow? Instead, you let them sit there until they turn to a shade of brown while contemplating their fate. Then you probably wonder if you should turn them into something that can utilize these almost over-ripe bananas. And that’s when you put together these deliciously moist banana blueberry muffins.

I’m sharing with you one of my all-time favorite recipes for a banana muffin. This is not just any banana blueberry muffin, but one that is so easy to put together and remains incredibly moist.

I know a lot of you cringe at the word moist but honestly, there’s no better way to describe just how good and moist this recipe is. For me, I find it’s almost getting those bananas to that over-ripe, brown stage which gives them the extra level of flavor and moisture.

These banana blueberry muffins are so good, you won’t be able to stop at one. Once you try these, you’ll realize you don’t even need any icing to go with them. I truly believe this is the best banana blueberry muffin recipe you have been looking for.

With simple ingredients that you will almost be guaranteed to have in your pantry, there’s no excuse to not try this recipe the next time you have some spare over-ripe bananas. It’s the perfect afternoon pick me up with a cup of tea or coffee.

Tips to make moist banana blueberry muffins

  • Always weigh and sift your dry ingredients. You definitely don’t want excess flour which will lead to dry muffins.
  • Make sure your eggs and butter are at room temperature. Baking and cold ingredients generally don’t go well.
  • Make sure you preheat your oven.
  • Use ripe bananas, as ripe as you possibly can. This takes the flavor to a whole other level.

How to make moist banana blueberry muffins

  1. The best part about this recipe is how easy it is to put together and you only need to use one bowl! I mean could it get any better?
  2. Start by mashing the bananas in a bowl, add the sugar, egg, butter, and vanilla and mix well.
  3. Then sift the dry ingredients into the same bowl and mix them together. Mix until just combined, do not overmix.
  4. Next, you can add in your blueberries and gently fold them through.
  1. Divide the batter among the muffin molds. If you want muffins with big tops, fill the molds right to the top.
  2. Optional, but I like to sprinkle the tops of each muffin with a few extra blueberries and then some coconut sugar (this is totally optional).
  3. Bake for about 22 minutes, then cool in the tin for a few minutes before serving. You can serve warm or cool completely!

Variations for this banana muffin recipe

  • Add cocoa powder to make this a Moist Chocolate Banana muffin
  • Add a swirl of Nutella through the batter before you bake.
  • Add some fresh raspberries to transform these into Banana Raspberry Muffins.
  • Add chocolate chips (milk, dark or white) for extra indulgence.

Easy Moist Banana Blueberry Recipe

These easy, moist banana blueberry muffins are the perfect afternoon treat. Best of all it's a one bowl recipe that comes together so quickly.

Ingredients
  

  • 1 ½ cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 4 large bananas (ripe to slightly over ripe)
  • ½ cup sugar
  • 1 egg
  • cup melted butter
  • 1 tsp vanilla
  • 1 cup blueberries
  • coconut sugar to top (optional)

Instructions
 

  • Pre heat the oven to 170°C bake.
  • Grease or line your muffin pan with muffin or cupcake liners.
  • In a bowl, mash the bananas well. Add sugar, egg and melted butter and mix well. Then add the vanilla extract and mix.
  • Sift in the flour, baking soda and baking powder and mix until well combined. Add a pinch of salt and mix well. Do not over mix.
  • Finally fold in the blueberries.
  • Transfer the mixture to your muffin tray and top the muffins with a few blueberries. You can also sprinkle with a bit of coconut sugar at this point but this is completely optional.
  • Bake at 170 degrees for 20 minutes or until you insert a skewer and it comes out clean.

Notes

You’ll have to play around with the time as every oven has different temperatures. So be sure to test your oven out first.
You can also make this recipe into mini muffins or cupcakes that can be added to lunch boxes. In this case, the baking time will need to be reduced to about 12 – 15 mins. Always test with a skewer; when it comes out clean, your muffins are ready.

This is one of the easiest recipes and one that’s great to get the kids involved with. One bowl, minimal mess, and staple pantry ingredients to give you a delicious end product. What more could you ask for!
