Easy Moist Banana Blueberry Recipe
These easy, moist banana blueberry muffins are the perfect afternoon treat. Best of all it's a one bowl recipe that comes together so quickly.

- 1 ½ cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 4 large bananas (ripe to slightly over ripe)
- ½ cup sugar
- 1 egg
- ⅓ cup melted butter
- 1 tsp vanilla
- 1 cup blueberries
- coconut sugar to top (optional)
Pre heat the oven to 170°C bake.
Grease or line your muffin pan with muffin or cupcake liners.
In a bowl, mash the bananas well. Add sugar, egg and melted butter and mix well. Then add the vanilla extract and mix.
Sift in the flour, baking soda and baking powder and mix until well combined. Add a pinch of salt and mix well. Do not over mix.
Finally fold in the blueberries.
Transfer the mixture to your muffin tray and top the muffins with a few blueberries. You can also sprinkle with a bit of coconut sugar at this point but this is completely optional.
Bake at 170 degrees for 20 minutes or until you insert a skewer and it comes out clean.
You’ll have to play around with the time as every oven has different temperatures. So be sure to test your oven out first.
You can also make this recipe into mini muffins or cupcakes that can be added to lunch boxes. In this case, the baking time will need to be reduced to about 12 - 15 mins. Always test with a skewer; when it comes out clean, your muffins are ready.
