We love a big breakfast in our household, especially on the weekends when we are all home together and no one’s in a rush to get to work or school. I have been experimenting with trying to get the fluffiest pancakes and I think I’ve finally nailed this one and can bring to you the best fluffy pancake recipe! These are thick fluffy pancakes with a hint of vanilla. They can be served with so many variations like fruit, syrups, bacon and so much more. Best of all, you only need a few simple ingredients to make this delicious easy weekend breakfast.

So, what makes the pancakes fluffy? Well, I’ve got a few tips for you to get your pancakes deliciously fluffy. What you’ll need to make the best fluffy pancake?

Making pancakes from scratch only requires a few simple ingredients. What I love about this fluffy pancake recipe is the simplicity of it without the requirement of any special ingredients or equipment. There’s a reason these are a classic breakfast favorite. They are definitely a favorite in our home. So easy to put together and made with ingredients that you will readily find in your pantry. Also, the variations you can add to the pancake batter are endless.

 To make homemade pancakes you will need:

  • All-purpose flour 
  • Sugar 
  • Baking Powder
  • Baking Soda
  • Salt 
  • Eggs
  • Milk 
  • Butter

Variations for a fluffy pancake recipe

While this is our easy fluffy pancake recipe, we have a few variations for you so you can try something different each weekend. I know my kids get excited when it’s pancake day for breakfast, so hopefully, yours will be too.

  • Add berries, and chocolate chips into your batter.
  • Sprinkle some lemon or orange zest into your batter (if you are doing this, skip the vanilla extract).
  • For a spiced fluffy pancake, you can sprinkle cinnamon, nutmeg, or allspice into the batter.
  • Simply add a mashed banana or banana slices for fluffy banana pancakes.

What to serve with these fluffy pancakes?

The options are endless, but here are a few of my favorites to get you started

  • Serve pancakes with maple syrup and fresh fruit. You can top it with fresh berries, sliced bananas, and even tropical fruits like mango.

Tips for making the best fluffy pancakes

·       Separate the eggs and beat the egg whites to a frothy cloud-like consistency

This is probably the most important step in getting those fluffy pancakes. You probably don’t need to go as stiff as a meringue but if you have an electric hand beater, I’d highly recommend beating the egg whites till they form a cloud-like consistency.

·       Don’t over-mix the batter

It’s all in the mixing. Once you mix all the ingredients except the egg whites, it’s important you gently fold in the egg whites and don’t over-mix. Overmixing leads to the gluten proteins bonding too tightly with other gluten proteins and leaves no room for air bubbles. This then leads to dense pancakes which aren’t pleasant to eat.

·       Let your batter rest for 10 mins

If you do leave your batter to rest, make sure you fold in your egg whites right before cooking. This way the batter still remains nice and airy resulting in the best fluffy pancakes.

·       Only flip once during the cooking process

If you are in the habit of flipping your pancakes several times during the cooking process, please don’t. You only need to flip the pancake once. It’s usually when you start to see air bubbles form on the top layer, that’s when you know they are ready to be flipped. At this point, the bottom should be nice and golden brown.

These pancakes are light, airy, and fluffy, and made from scratch. They’re not too sweet and have the slightest taste of vanilla to them. The best part is the ingredients required are most of your pantry staples.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 tsbp sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • cup milk
  • 2 eggs (small) separated
  • 1 tsp vanilla
  • Pinch of salt
  • butter for frying

Instructions
 

  • In a bowl whisk together the flour, sugar, baking powder, and baking soda.
  • In a second bowl add the egg yolks, milk, vanilla, and salt and mix well together. Slowly combine this with the flour mixture and set aside.
  • In a separate bowl, whisk the egg whites until they form cloud-like consistency. You don’t need stiff peaks, but the egg whites should be frothy and white in color. Set aside for a few mintues.
  • Next, heat a non–stick pan.
  • While the pan is heating use a wooden spoon or spatula and gently fold the egg whites into the flour mixture. The mixture should feel light and airy.
  • Add a knob of butter and spread it around the pan. Using 1/3 cup batter measure, pour this onto the preheated pan starting in the middle and moving around in a circular motion to get the perfectly shaped pancake. Leave to cook for 2 – 3 minutes before flipping over. (Remember you only want to flip once). When you start to see a few air bubbles on the top surface, you know it’s the right time to flip the pancakes over. Continue cooking the other side for 1 -2 minutes. Repeat with the rest of the batter.
  • Serve the pancakes hot. I love to drizzle mine with maple syrup, fresh fruit, and some compote.

Notes

You can make mini versions of these pancakes and stack them on a toothpick. Perfect for a brunch party.

Can I freeze the pancakes?

Once they have cooled down transfer them to a tray lined with a baking sheet and place the pancakes into the freezer for 30 minutes (or until they are hard). Then divide them between freezer bags with a sheet of parchment paper between them. To reheat, place the pancakes onto a plate and microwave for 20 to 30 seconds for each pancake.

Can you make fluffy pancakes without buttermilk?

Yes, most definitely. While a lot of recipes call for buttermilk, this one doesn’t. This recipe requires just regular milk.

If you ever desperately need buttermilk and don’t have any at home, you can create your own buttermilk by adding a tablespoon of white vinegar to a cup of milk. Let that rest for about 10 mins and voila, you have your own homemade buttermilk! If you don’t have vinegar, just use some freshly squeezed lemon juice instead. 

Why are my pancakes flat?

  • The biggest reason for flat pancakes is an overmixed pancake batter. Overmixing your batter will deflate the air bubbles making it hard for the pancakes to rise. You also develop too much gluten which results in a chewy dense pancake consistency. Use a gentle hand when folding the wet ingredients into the dry ingredients and mix just until incorporated.
  • Another reason your pancakes could turn out flat is if your baking agents are stale. So always make sure you check the expiry date before using any baking agent.
  • Turn your pancakes over gently and only once during the entire cooking process. If you keep flipping and pressing down on them, you’ll lose the fluffy pancake element.

Should I let the pancake batter rest?

Yes, you should let the pancake batter rest. Resting the batter for about 5 minutes helps it to relax any gluten that may develop, resulting in the best fluffy pancakes ever.
